Switching from vanadium to lead antimonate is not exactly a step up.

There are some iron yellows that are nice and safe. Bright yellows though
are usually based on stuff like cadmium, vanadium, antimony compounds, or
praseodymium compounds. Not much is known about the toxicity of
praseodymium.
