Anyone who advocates measuring almost anything that is powdered by volume
is looking for a problem. I know that Iris, who, among her other sterling
qualities, is a VERY good cook- uses a kitchen scale for allmost all such
measures. She said that when she uses "cups" to measure flour, the results
are "iffy".
In my former existance, in which I occasionaly inhabited a Lab (chemical),
NO-ONE used volume measure for dry ingredients- it just was not done.
