Just one small thought. Perhaps the shimpo is turning at an unaccustomed speed.
Either faster or slower. I found that in changing from kickwheel to the
electric Pacifica I had trouble centering until I realized I was generally
having the wheel turn too fast. I have the Idea that there is an optimum speed
for centering for each amount of clay, it's softness/hardness, and a person's

i had trouble centering on my new/used shimpo wheel and suddenly realized
that with the verticle handle provided in addition to the foot pedal to
adjust speed that the handle was in my way. I had been just sort of
avoiding it but it obviously, in retrospect, was being thrown off by its
presence.

If you are using plastic batts on top of that new wheel examine the surface
for a pattern with an axis. If that is it carve concentric circles into the
surface of the batt to make centering possible. If you are not using a
plastic batt then it is a true puzzler.
