Has anyone seen the commercial concerning a popular allergy medication where
a sculptor (wearing eye protection, but no dust mask) is creating from a
block of stone/plaster with what appears to be an angle grinder? Airborne
particles fill the area around him as he works, then the scene cuts and he
says he uses "_______" for all his allergy (coughing and sneezing) issues...

HoLy CrAp!!!

The next time I saw it, there was a cat sitting in the room with him... I
guess they were trying to insinuate that the cat dander is the real concern
for this guy's nasal, bronchial, and lung tissue irritation -eh?

From the searching I've done, it's not a real sculptor, but rather an actor
by the name of Jon Eric Preston. On the medicine's official website, all the
actors they hire are described as "representative of the real symptoms that
allergy sufferers experience and the clear relief that ________ delivers in
many real life situations".

In real life, Preston is skilled at everything from snake handling to
firearms. Perhaps he could do an adhesive bandage commercial where he
practices the fine art of Russian Roulette...
