This is getting silly, also nasty. As I know that NO glaze recipe is
unique, or special, any more than a soup recipe is or can be, I find this
whole "It's mine, all mine..." posture counterproductive.
So, yes...YOU were the first kid on YOUR block to add cardamom as well as
nutmeg to your matzo balls. Bless you! But do not convince yourself, nor
others, that this is a unique and exclusive thing. Steaming fish in
Anisette because Pernot is too pricey? Believe me, you are not the first to
do that.
The other day, while mixing yet more mortar for The Great Raccoon War, I was
thinking that a chocolate, almond paste cheese cake would be divine! Was I
going to invent it? Sure I could. But there were recipes on the
Internet...
The same applies to glaze.
But that is not the issue. Which, it seems to me, is that the authors of a
book with glaze recipes do not want those recipes handed out on every
streetcorner. Some think this a grand idea--look, they worked so hard,
they deserve to sell their book, which they will sell fewer of if the
recipes "go public"--and the others think the recipes--calcium-borates,
common at c. 6--are not that original, but the rest of the material --the
instructions, explanations, glossary etc are worth the price, recipes or
not.
This, in common parlance, is a difference of opinion. It is not a reason to
draw up battle lines and sling mud, or similar.
With Mel at his farm his 2x4 is on holiday--but maybe Joyce will bring out
her Kentucky Long Rifle.
