Yes, I use a cast iron pan. Paul Dean sells one at Wal-mart.

John, your recipe calls for tossing the dough in a preheated pan, =3D
covering it, and putting it in the oven. This should be a cast iron pan? =
=3D
Skillet or Dutch oven? Or does it matter?=3D20

Sounds like something I could start the night before, then bake for =3D
breakfast. Yum!

for those of you who do make sourdough bread, how often must you make
bread? I love home baked bread but when school starts up again I know I
will not have time to bake everyday. Will the starter keep ok if I only
bake bread on the weekends?

The 'Mother' has to be fed every 2-3 days=3D2C depending on where you keep =
it=3D
=3D2C the weather and how sour you like it. I just add 100gm weight of wat=
er=3D
and 200gm weight of flour. You might want to discard the top 'skin' before=
=3D
adding. Then just mix=3D2C knead and replace in your container. Revive it =
ag=3D
ain enough time before you want to start mixing your bread dough=3D2C for i=
t =3D
to be ready when you need it.

I have followed the bread discussion with great interest. Having been =3D
trained in France in the art of bread making, working in several U.S.A. =3D
bakeries and operating my own bakery, I have a few personal beliefs in =3D
the art of bread making.

there are those recipes that require no kneading and one can have bread =3D
which is better than Sweetheart Bread. There are other breads which =3D
need to be kneaded.

the longer it takes for the bread process, the better it will be. =3D
Flavors develop over time.

And I'm a beliver that the dough needs to be touched by the hand. It's =3D
a living entity that responds to life. Mass production of my "Artisan =3D
Breads" may have been mixed in the mixer; none ever entered the oven =3D
without the touch of the hand, kneading and forming it. The mixer =3D
cannot tell you when the dough is ready anymore than the clock.....but =3D
the hand can.
