And here's a "pizza" recipe (or focaccia, or crackers--really,
anything flat) from a fellow wheat-restricted person:
per serving: 1/4 cup potato flakes; 1/4 cup brown rice flour (white is
ok); a few drops of oil; a little bit of salt and any pizza seasonings
you want to add.
Mix with enough water to make a soft dough. Spread the dough thinly
with your fingers, placing it between a parchment-lined baking sheet
on the bottom and a piece of plastic wrap on top. Remove the plastic
wrap. Bake at 400F for 10 minutes. Top however you like, bake another
10 minutes, or until it is brown around the edges. This gives you a
crisp pizza; for chewier pizza bake at 300--350F for longer.
