Looking at Phil's suggestion takes you to the Chitin Society.
Interesting that this is a source of Glucosamine, recommended as a useful
dietary supplement in the management of Arthritis.
I often wonder if the high incidence of this disease comes from eating over
refined food where the things that would provide us with basic building
blocks for rapid healing are removed, eliminated from the general diet. The
tough parts like such as sinews, tendons, cartilage and bone marrow

Ivor,
Your comments piqued my interest and I thought I would just say this, I
agree with your contention. I think that today so much is removed from
foods when they are refined, and so much is added to foods in the way of
colorants and preservatives and other chemicals to maintain shelf life
and enhance taste, that we consumers cannot really utilized the food
for best body maintenance. Results over time - a high disease rate. You
are right. There isn't enough of the good stuff to repair our bodies.
Over time, I have had enough "full panel" blood testing to know where my
failings are in terms of various vitamins and minerals etc, I am a
diabetic, and that alone says there are problems with nutrition. Then
when I look a the literature, and compare my blood data with the
standards, I find many of my electrolytes, and other chemicals are out
of whack. Chromium - low, Magnesium - low, and on and on. The
consequence - I take many supplements to pump those up. I was told I
had hight triglycerides and elevated cholesterol, and was put on the
typical low fat diet and statins. After doing a lot of reading on the
diabetes and the cholesterol issues, I quit the statins, went on a
whole foods, high protein, high fat, very low carbohydrate diet. I got
ALL the sugars out of my diet including high fructose corn syrup( really
nasty stuff - what it does to us.) Result - diabetes is well controlled
by diet alone, and cholesterol has dropped back to normal. I have
maintained for a long time the whole foods diet - nothing processed,
nothing packaged or canned. My numbers stay pretty normal, and I'm
pretty much free of any arthritis. I attribute this fully to the changes
in diet that I have made. I get a short version "blood panel" every 3
months, and a full "blood panel" every 6 months - just to keep tabs on
my numbers. A diet of good whole food -without pesticides and chemicals
- plus exercise, will keep most ills away from us.
