porcupine stew and smoked beaver ham

Way back in the day (my earlier Alaska days) in the Alaska bush in the
fall, porcupine stew and smoked cured beaver ham was a favorite in moose
camp until the first moose was taken. It is amazing how much fat a
porcupine can put on eating wood!!! (actually stems and twigs) And who
would have thought beaver ham could be so tasty, but boy was it ever.But
when you think about it - they are vegetarian. Never wasted a porcupine
pelt - the quills were used by the native women, and in my circle of
friends, the beaver was never taken just for his pelt - the meat was
never wasted. Most all of it was eaten.

Ah, but John, although they both sound good, if there's a better meat tha=

n moose, I haven't=3D20
tasted it.
