I don't think you need to calcine zinc. My experience is with
uncalcined zinc from Minn Clay, and I use it in crystalline glazes in
the 20-25 % range. If you have some clay in the glaze, that should help
the adherence properties. I don't think the zinc is the source of your
peeling problem. I've tried (purchased) calcined Zinc, and for some
reason it made my glaze pinhole (possibly, it was suggested, because the
calcined zinc is more concentrated). I would consider changing recipes,
or look at other ingredients as the culprit.
