Are you getting enough money to cover what could be months of work?
Would it be possible to combine your handmade tiles with commercial
tiles?
I made and installed a handmade tile floor for a 225 square foot
room. It took me 8 months - I could only work on it part time. I had
very few problems with warping. I used a dependable, open, toothy
earthenware body. The tiles were thick - 1/2 inch or slightly more, and
were no larger than about 4" across. The finished floor looks good, but
money was no consideration - it's the kichen floor in my own house.

For your tile installation in the restaurant, you may want to have the tile
professionally installed - if that is in the budget. I did a public art
commission with tile once and had someone else install it for me so that I
knew it was done right, and if it had problems it was their responsibility to
fix. I think they were paid separately. I know that most tile installers use
lath and mortar or put up wonderboard.
