Several people mentioned using kiln stilts and bent wire grips to hold
plates while dipping them in glaze. A chapter in John Colbeck's "Pottery
Materials: Their Prepartion and Use" (London,Batsford, 1988, ISBN 0 7134
4695 1) provides by far the best descriptions and illustrations that I have
seen of these and of many other aspects of glazing by dipping and
pouring--and not just of plates but of everything from small bowls and
tiles to quite large vases.
