Cazuelas are terra cotta cooking vessels that are meant to be used over
direct heat, either gas flame or electric range. They have a lead-free
brown glaze on the interior surface and the lip. They are hand thrown
and, at least some, are made in Spain near Barcelona.
Cazuelas are fired to 2000 degrees and are brittle when new. After a
6-hour soaking before the first use, they can be used over open flame,
in the oven, in the microwave, and washed in the dishwasher.
Amazing to me.
I hope someone can tell me what claybody is used to make these things.
Or anything else that would be helpful to know. I'd love to make some
just to use myself.
