You can have a reducing flame without back pressure, but you cannot have a
reducing atmosphere without back pressure. The back pressure is essential
in order to ensure that the reduction atmosphere is as uniform as possible
throughout the kiln. The secret is to avoid excessive back pressure and
excessive reduction. I think that Steve is right about potters being able
to judge reduction and back pressure very sensitively by this method (a
smoking stick or newspaper twist held in front of the spyhole), but it is
hard to imagine it could ever give the precision of an oxyprobe.
