This isn't clay but I've used it with kids a number of times. Easy to
carve, although if you don't let it cure for a day or two after mixing,
it tends to crumble.
1 part sand
2 parts plaster
3 parts vermiculite
Add enough water to mix a thick slurry, generally around 2 parts water.
Pour into a container and use it the next day. I usually had the kids
weigh and mix into a plastic bag. That way they could also form balls or
other shapes by cupping it in their hands until it starts to set. We
used dollar store screwdrivers and bottle openers to carve. It makes a
MESS.
