This is one of those generalizations that just does not stand up. It is
true that one must be very careful when sharpening tools on a bench grinder,
in order to avoid overheating the metal (generally by frequently dipping the
tool in a small container of water). There are plenty of times where tools
are sharpened on a bench grinder, carefully, expertly, effectively. If a
very fine edge is needed, that is better done with a stone or a steel, but
grinding is often necessary before putting on the final edge.
