So, I can't move to another wheel. How do I make my wheel head level?

Shouldn't make a bit of difference, just put some shims under your chair so that
you are tilted to the same degree. :)

Seriously, being slightly off plumb shouldn't make a bit of difference, What
would give you problems is if the wheel head has some wobble to it.

This is precisely true...a big wobble in a wheelhead will kill a pot quick.
A tiny wobble can be a damn nuisance.

Back in the old days at Marshall Pottery when real potters made 8 gal.
churns and 24" strawberry jars, they had a big ol wheel (30"head) with the
head at about 20" off the floor. They kept the head tilted to the right,
and toward the potter a bit so that it would be easier to reach down to the
bottom of those monster pots for the pulls.
