Thanks to the Food & Drink page of last week's Independent Magazine,
potters in the UK will be pleased to hear they can now source genuine
US "Karo" corn syrup for making the famous "spooze"! It is apparently
stocked by the Rosslyn Delicatessen, 56 Rosslyn Hill, London NW3 (Tel:
020-7794 9210). (They will post it, but no indication of quantities or
prices).
Interesting addition: Raymond Blanc, the food writer says "I love
(corn syrup) because it makes a neutral base". So once you get some
Karo, you will be able to try his duck with jasmine tea recipe Le
Manoir aux Quat' Saisons, which he admits was written when he was
still an idealist about food, so many ingredients are difficult to
get. He recommends trying GLUCOSE SYRUP or honey as a (much sweeter)
substitute. Certainly glucose syrup would be a better substitute than
Tate & Lyle syrup, which is rather sticky and thick for mixing in
spooze.
