slab built tofu press

I don't know of any books, though I think "The Tofu Cookbook" has a
descrition of a wooden one. I just made one for myself when I was making
tofu a lot. To be honest, I now use plastic instead.

What you need is something like a brick shaped colander with a presser
lid. There is no reason you couldn't throw one except that a round block
of tofu is hard to fit in the fridge, especially in a container full of
water.

I found two matching plastic storage containers, with lids, rectangular
and twice as tall as I want the finished block to be. I took a long
metal skewer, heated it on the gas range, and melted holes into the
bottom and sides of one of the boxes. I line that one with a bit of
muslin, and ladle the tofu curd into it... the whey drains out the
holes, and I use the cut-down lid on top with a few soup cans to press
the block. Then when it's done, I put the brick of tofu into the
matching container (the one without holes) and cover it with water, then
store it in the fridge.

Home made tofu is a lot better than store bought -- and holds up better
for stir fries and such. And I can buy a lot of dry soybeans -- organic,
even -- for the price of those little packages from the store. The okara
(the pulp left from making the soy milk) is good in breads, and I feed
the extra to my chickens or add it to the compost.

As for clay one, I'll have pictures of mine up in a few weeks, remind me
and I'll send you the link. I have a recipe for making soy milk and tofu
at http://www.ivillage.com/primalmommy/recipes.html

Yours, Kelly in Ohio (hoping the weather clears... my brother's band is
playing downtown at the "rib-off" this afternoon...)
