There are some photos as you describe..
in Pioneer Pottery, Micheal Cardew.
This is much the same as what is happening for me.
A larger ball of clay..10 kg rather than the usual 5
makes it quite simple...you can see the two directions.
The problem here is the "handle" that develops...

To eliminate this I am involving the upper hand..
which normally balances the clay during rotation
...into the petal making.. by which the inner "core"
is spun down to the outside and... cycled back into the mix.
Kind of a rams head cum spiral wedge technique combination

Another photo in Fourniers, Illustrated Dictionary.
Shows the more basic/standard wedge pattern.
Actually I can now see it has more to do with the size of the chunk of clay.
Rather than the technique ; )
