"Expanding arsenals" (well put!) come with the
territory but.....If you can get your hands on a
CUSHING'S HANDBOOK, it includes a breakdown of the
ingredients in various frits. Comparing the breakdowns
will give you a rough idea of what frit might differ
the least from what your recipe calls for. Reading
the notes column at the right will also give you an
idea of how diff. frits may affect your recipe.
