I would not recommend that as that will lead to over-use of the good hand.
Axner has a gadget that can be attached to a wheel to mechanically center
clay. Then something else can be attached to open it. I have a friend who just
deliberately throws out of round, and opens with what looks sort of like a short
throwing stick, to acccommoadate her arthritis. However, she had pottery
skills before this development.
