Lee,

The other thing that I noticed that food in Japan is generally allowed
to sit in a ceramic piece for very long. We used HCl on the Oribe
glaze that a group of potters brought from Japan. The hydrochloric
Acid was used to take the metallic deposit off of the surface making
the glaze appear more "Green" and less like the police officer's
sunglasses. One of the teachers from the US who was there has earned
a PhD in Chemistry along with his MFA. His only concern was that the
acid be handled safely. He explained what was being done, but it was
in '94 and my memory is hazy.

As an aside while Japan has half the population in a country about the
size of California they have fewer lawyers than the state of
California. This is just another reason why I like Japan so much.
