Dear Clayarters,

When I heard that users were placing their beer can chicken bakers in a
barbeque pit, I was very surprised. I use Highwater Ovenware clay and my
customers are all told that there has to be food filling the whole
container. If there is liquid in the "can" part, there should also be
liquid in the bowl part to even out the heat absorption. However, this
practice sounds like the clay should be flameware and Highwater Ovenware is
NOT flameware. I would limit this use to the OVEN only but really, the
problems outweigh the uniqueness of the pottery. A chicken baked on an oven
rack in the oven comes out just as juicy and delicious. However, it should
not be in a pottery baking pan unless you fill it with beer and/or juices
and not let them completely evaporate.

Do test your new design for function in many different ways. Customers most
certainly will transfer the use of the wire holder to the barbeque grille
without thinking. Give them to your friends to test too, but be sure your
liability insurance is up to date.

Warm regards,

Bonnie Staffel
