dry wall brick stacking versus mortaring

Anyone want to toss me the pros and cons to assembling my Olsen
Updraft by dry wall stacking the firebrick in the frame including
keystone instead of mortaring --like it is called for in the instructions??

I've seen a lot of clean successful unmortared joints in a dry stack set
up and was wondering do I really need to mortar?

I have concerns (discussed with friends off line) that mortar
particulates will contaminate my surfaces. It''s a mess to mortar also I
feel I'll create more space taken up by adding mortar in my layers and
that I'll run out of room at the top to close off the brick stake in the
frame. Is this unfounded?
