If you can take a casserole of food directly out of a 375 degree oven, why
can't you open your kiln at that temp?

You can, though received wisdom says you will be stressing the pots and the
refractories (bricks, posts, shelves) by doing so. I routinely unload my
kiln at 180-200C, and have had no problems thereby.

Laurie, my guess is that when the casserole is removed from the oven
it is filled with food and because of this will cool slowly. When it is
removed directly from the kiln at that temp there is a quick cool which
may stress the fit between the glaze and the pot. Though in an ideal
situation, where there is the best match possible between glaze and pot,
there really shouldn't be any prohibition short of one that concerns
handling pieces that are hot.
My thinking along these lines is why rush the process. Just let it
cool gradually (less ware and tear on the pots as well as the kiln) and
remove the pieces that won't burn your hands or a counter top.

The thermal mass of the food prevents the clay
from cooling as rapidly as an empty pot would.
