I wonder if where one might find a picture of the bamboo knives Lee
mentioned. Are they steam bent or straight? I'd love to make some, but
don't have a clue as to what I'd be attempting.

John, check Chris Henley's web page (sorry, I don't have the URL, but I'm
sure someone else here will......) for bamboo knives. Just sharpened mine
this weekend for the first time in 2 years. LOVE IT!!!!!!!

Chris is an amazing toolmaker, and a really nice guy.
The throwing sticks he made me are nothing short of gorgeous, too.
You could do far worse than order tools from him.

The wooden tools are simply carved. They are both made of bamboo and hardwood. But the bamboo requires large diameter bamboo, to get a flatter curve.
If you want to make your own tools a really great resource is Hand Made Potter's Tools by Philip Whitford and Gordon Wong, Tokyo : Kodansha International, 1986. ISBN: 0-87011-772-6
You can see different tools there and you can also see how the wooden knives are used for trimming. If you go here, you can see the intro to the book and see the section on stamps:
