I was going to make some handmade chop sticks out of some bamboo I have for
some rice bowls. Should they be coated with something?

Thanks Mike. I am just sanding smooth them with a belt sander.

No, definitely leave as is. Just make sure they're smooth and splinter
free. They should last forever like that. If you put a smooth finish on
them it makes it harder to pick up noodles and other slippery stuff.
