Gail, it is the worst thing to do with good knives and of course you know
that.
Many years ago we lived in France. We had the opportunity to get to know a
lot of French people and I'll never forget this comment: " You Americans
are so antiseptic; when you leave your country you all get sick" That was
25 years ago and I think we have gotten much worse. It is not really an
admirable trait.
Wash your hands, dishes etc and get on with life. The rest will take care
of itself. All of those antibacterial commercials are to sell more bleach,
more soap and create more fear. Just wash your stuff and get over the germ
phobia; it isn't healthy:).
Recent studies show that kids whose Mom's are constantly bleaching
counters,
cutting boards (crazed pottery) etc have children who get sick more
frequently than kids who get to play in the dirt and consume a few germs.
They have a built in immunity to bugs. Think about it!!!

My grandmother used to fuss on my parents and my aunts and uncles, and
later us, about being to fastidious over "clean" with the kinds. She
said every kid needed to eat a pound of dirt to be healthy. She passed
away in 1985 at the age of 99 years and 9 months.
I wouder at times how much she knew then, that we don't today.

Oddly enough, they also figured out recently that a well-washed wooden
cutting board actually held less bacteria than any of the plastic ones.
The only time I worry is with chicken, then I wash the board in as hot a
water as I can stand, and rewash. I also don't put the board into a sink of
soapy water, I put soap on the board instead, and then rinse in running
water.
