Neil,

You may need to consider a digitally-controlled kiln, controlling BOTH
side-elements AND a 'powered bottom' [elements in the kiln-bottom].

The powered bottom may help reduce the chance of extreme thermal gradients
'within' the wide shallow "ware" body during firing.
