what temprature do you have to take earthenware up to in order for it to be waterproof or foodsafe or whatever?

You'll need to think "you can't get there from here."

Earthenware, given it's make-up, especially the high iron content, is
difficult, if not impossible, to vitrify without distorting, bloating or
melting the clay.

Covering the clay with a well formulated, well fitting glaze will make it
somewhat waterproof and food safe. I would also advise hand washing and not
putting this ware in a dishwasher.
