Mel,
we have plaster wedging tables in the studio at school , we also have
some plaster bats. Not much trouble with chips of plaster in the pots.
I can not remember any in the last 5 or 6 years. 100+ students per
quarter with each student making on average 30 pieces.
of course we teach them how to use the stuff.

I have had some plaster blow outs in pots in the past, most would look
at the wedging table and blame that. It was from some calcium nodules
in the clay from one of the raw material suppliers not my table or bats
( at that time I wedged on wood and used plastic and masonite bats).

Of course to each his own and as always YMMV

hell, i hate plaster.
gets in your clay.

get some building blocks like earl says, pavers.
or get some scrap plywood or particle board.\

lay it out on that. many use sheetrock pieces.
whatever will soak up water. construction site clean up.
tape the edges with duct tape.

try the old pair of jeans...with the cuffs tied up.
fill the pants with clay.
let it hang from a tree. turn inside out.
plaster yaster.
