This reminded me that I have been meaning to offer my little pumpkin
pie adjustment:
I substitute silken soft tofu for the evaporated milk or cream. Same amounts.
Tried this in desperation one Thanksgiving when I was off dairy, now
I wouldn't do
it any other way.

Yeah, amazing, trade out most of the fat and trade in a whole lot of
protein....presto....
nobody will ever guess (unless you tell them).
