(As an aside, I purchased some of Andrew's marvelous smoked salmon two=20
or three years ago. He shipped it vacuum-sealed pack which can be kept=20
in the cupboard unrefrigerated for a long time if unopened. If opened,=20
what is not to be used right away can be immediately packed in an=20
air-tight wrapping (I double packed it in two new 'Zip-lock' type bags)=20
and placed into the deep freeze where it will last for months as good as=20
new.) (Serve with mild finely chopped white or red onion, tiny capers=20
(Crosse and Blackwell brand if you can get them, they are much smaller=20
and milder than the larger generic brands), thinly sliced light rye=20
bread and pure unsalted butter.) (Oh my!)

PS: My husband and I and our two daughters spent an entire year in=20
Orkney, on a teaching exchange. It was a delightful year. (Almost 30=20
years ago now... )
